I love watermelon.
My mouth is watering just thinking about it.
What could better than the crisp, cool, refreshing taste of that summer fruit teasing your taste buds? Enter my new friends: honey, mint, and lime.
My sister, Barbi, brought over this awesome recipe last time we got together and I will be forever grateful. It is a great way to serve watermelon when you want to add a little class to the typical summer fruit and picnic table.
Have fun and enjoy!
Ingredients:
1 watermelon, chilled and sliced
1/2 cup fresh lime juice
1/4 cup honey
1/2 cup mint, chopped
Cooking Directions:
Place the watermelon slices on a decorative platter. In a small bowl, whisk together the lime juice and honey. Drizzle over the slices of watermelon. Sprinkle the mint over the slices of dressed watermelon and serve immediately.

I was reading a bit and LOVE the pictures of you and the family hiking. We have a little one right now and are hoping to have a few more in short order. I laughed as I have a wrap that is VERY similar to yours and we just found a Kelty KIDS Ridgeline at a rummage sale for $5. In a few years we may be able to post very similar photos :)
